Butternut Squash is nutritious, packing a good amount of vitamin C, vitamin A calcium, and potassium into each serving.
We will be transforming 175 lbs of butternut squash into 500 servings of soup for local food bank clients and we need some support with all the associated peeling, chopping, cooking, and cleaning tasks.
This is a project of the George Washington Carver Food Enterprise Center in collaboration with NoVA Food Rescue who is donating the squash for processing.
